Rosemary and Lemon Cookies
I love cooking with herbs. I love the way they smell and taste. Up until last year, I never knew about herbs or how to cook with them. Now I cook with herbs in almost every dish I make. I was really excited to see an episode of Giada at Home based on baking with fresh herbs.

I wanted to make Giada's Lavender and Lemon Cookies, but I did not have lavender. I only had Rosemary, Mint and Basil. I decided to use rosemary instead of lavender. When I decide I want to make something, I normally cannot wait. I become obsessed with the ingredients I need for the recipe until I can get to the store. If I can't get the right away, I improvise and see what I can come up with. This is what I came up with.

1 cup all purpose-flour
2 tablespoons sugar
1 tablespoon fresh Rosemary
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
1 stick of cold butter (Chop tablespoons in half)
2 tablespoons honey
1 large lemon zested
1 tablespoon lemon juice (From large lemon)

Preheat oven at 350 degrees. Line baking sheet with parchment paper.

Add flour, salt, sugar, Rosemary, and baking soda to food processor. Pulse for about 30-40 seconds. Add lemon juice and honey and pulse until dough forms. Form dough into balls and place on cookie sheet. Press down gently with spoon to form a circle. Bake for 9-11 minutes. Cool for 5 minutes. Place cookies on wire rack and cool for 15 minutes before eating.

I was really please with the result of these cookies. My two-year old loves these. I hope you enjoy!
