Easter Cupcake Fun

I found the best recipe for vanilla cupcakes from Buddy Valastro. He made these on the first season of TLC's Kitchen Boss. They are called Valentine's Vanilla Cupcakes. I have never tasted such an amazing taste from a cupcake before. I decided to make delicious cupcakes and add a touch of Easter to them. These cupcakes are a great idea for those looking for Easter traditions.


Ingredients
1 1/4 cup all purpose flour
   3/4 cup room temperature butter
   3/4 cup sugar
1 1/2 teaspoon baking powder
   1/4 teaspoon sea salt
   1/4 cup room temperature milk
   1/4 cup room temperature buttermilk
   1 teaspoon vanilla extract
   1 large room temperature egg
   1 egg white

Preheat oven to 350 degrees. Line a 12 portion muffin pan with cupcake liners.

In a bowl, whisk flour, baking powder, and salt.
In another bowl, whisk milk, butter milk, and extract together.

Using a stand mixer with whisk attachment: combine butter and sugar, beat medium for 2-3 minutes. Scrap down sides. On low, add the whole egg. Increase to medium speed and beat until incorporated. Scrap down sides, repeat with egg white.

On medium-low, add dry mixture, alternating with wet in three additions of dry wet, dry wet. Scrap in between additions.

Fill liners 3/4 full with batter-Do not overfill.

Bake 20-25 minutes. Toothpick should come out clean.

Cool cupcakes before frosting.

I used Wilton's cupcake decorating kit to make my Easter Bunny cupcakes. I hope you like them.
